Trained in Japanese cuisine at hotels and kappo restaurants in Japan and came to the U.S. alone in 2004.
2004-2008 Started his career in the U.S. as head chef at a Japanese restaurant in Nashville, Tennessee.
Since 2009, he has been working at Global Dining California Inc. Gonpachi Los Angeles as an Executive sushi chef.
He is a Michelin chef 2012, James beard and winner of the Michael Mina of the Four Season Hotel Pabu He will develop a new sushi izakaya business in Baltimore as executive sushi chef.
2014 Launch in Pabu San Francisco as Executive sushi chef and launch a monster restaurant with monthly sales of 1.5 million USD
2016 Founded Y's 04 LLC
In 2016, he joined AFURI USA INC as a Corporate Chef / Chef de Cuisne from the first restaurant, where he was involved in product and business development and traveled around the world opening and leading 15 restaurants outside of Japan.
2021 Developed the business format of Tanaka international Inc. and provided guidance on product development
