Trained in Japanese cuisine at hotels and kappo restaurants in Japan, then moved to the U.S. alone in 2004. From 2004 to 2008, began a culinary career in the U.S. as Executive Chef at a Japanese restaurant in Nashville, Tennessee.
2009 Joined Global Dining California Inc. as Executive Sushi Chef at Gonpachi Los Angeles.
2012 Developed a new sushi izakaya concept as Executive Sushi Chef at Pabu Baltimore, operated by Michelin-starred and James Beard Award-winning chef Michael Mina, located in the Four Seasons Hotel.
2014 Launched Pabu San Francisco as Executive Sushi Chef, creating a "monster" restaurant with monthly sales of 150 million yen.
2016 Established Y’s 04 LLC
2016 Joined AFURI USA INC from its first store as Corporate Chef / Chef de Cuisine, engaged in product and concept development. Traveled the world opening and training for 15 international locations.
2021 Led concept and product development for Tanaka International Inc.
